Twice Baked Potatos and Potato Skins

Last week I decided to make a large batch of twice baked potatoes and potato skins. One way I have learned to make a large quantity of baked potatoes is to use my crock pot! Just wrap each potato in foil, pierce and put in the crock pot on low for about 8 hours. Test with a fork for doneness.

To make twice baked, slice each potato in half scoop out the potato into a bowl. Add enough milk and butter to make a mashed potato like filling. I added in crumbled bacon and shredded cheese. In half the potato skins fill with the potato mixture. Lay out on a cookie sheet and flash freeze. Once frozen you can put them into a ziplock bag and just pull out what you need. Bake on 350 for 30 minutes if thawed. If you are taking them directly frozen bake for about 45 minutes.

In the other half of the skins I filled with cheese and crumbled bacon, put them in the oven just enough to melt the cheese. Cool and then flash freeze. Once frozen you can put them in a ziplock bag.

Here are the potato skins. Next time I will add a bit more cheese.

That looks yummy. I never thought of using the crockpot for that. With warmer tempatures here now, that will be a lot better than heating the house up with the oven.

I made baked potatos like this a couple of weeks ago and they were sooo good! I did not have any foil so I coated them with a dab of butter and pierced with a fork and they turned out great. I will have to try your suggestion of twice baked and potato skins, my family would love both!

I tried crock pot baked potatoes Saturday and they did not turn out right. I used the fork to punch holes in the potatoes and then put the foil on. Do you think if I had punched holes after the foil, that it would have made a difference?

I pierced mine after I put the foil on them. The steam needs a way to escape during cooking
